Default why does zmhostname return...

that's it. nothing else.

how can I change it if I can't even start zimbra at the moment?

For the simple reason that they've set the hostname incorrectly, exactly the same as you've done on your installation. Installing Zimbra requires a correctly configured /etc/hosts file and valid (and correct) DNS A & MX records, if they're correct then it's a trivial matter to install Zimbra.
