is that any way to take real time backup of all mails send and received by all users? so we can check and retrieve them at any time to see users activities.

You may implement postfix's always_bcc or sender_bcc_maps & recipient_bcc_maps.

Postfix Configuration Parameters

This would bcc all messages to defined account, you can then check that account for user activities.
