Upgrade from ZCS 7.0 Beta 3 to RC

Will it be possible to upgrade the open source edition of ZCS 7.0 beta to a release candidate once it's available?

There is no currently scheduled RC for ZCS 7 (unless something dramatic happens). The beta versions are meant to be used in testing not production, so you'd be best installing a clean copy of ZCS 7. Having said that, you will probably be able to update to the GA version when it's available - as always, read the Release Notes in detail when it's released.

There should be no problems but that comes with a) no guarantees at this stage and b) the proviso that you read the Release Notes in detail and run the upgrade on a test server first.

No, I'm afraid I couldn't give any idea of release dates other than the one in the Product Portal and that's - early 2011. In general product releases are not pre-announced and the announcement will be in the forums.
