I want my zimbra server backup in every one hour and i want backup
/opt/zimbra folder. and also my zimbra size is arround 1TB. so please suggest
which is better for this backup project.
Zimbra backup without any zimbra Services Stop.

First of all, you need to update your profile with version info. Without having information about which ZCS flavour you are using, it would be difficult for anybody who might help you.
Another thing is that, I don't think backing up every hour is a practicle thing. What do you exactly want? For example, for my zimbra size is arround 300 GB and a full backup goes for approx 2 hours & differential backup for few minutes (backing up to NAS). If your /opt/zimbra is of 1 TB, then time duration would obviously be increased.

There are several threads in the forums (and wiki articles) with backup scripts and you should take a look at those. If you need a backup without stopping Zimbra then you should consider the Network Edition.

That's rather a lot. With that much data I'd suggest moving the store to a SAN and having that take care of snapshotting the volume at regular intervals, you may get some mileage out of that.
Logic would clearly say that if an incrimental is taking 25 mins with the services offline, then it would take longer with them online, so your server will be running a backup pretty much all of the time. What hardware is this running on? With a mailstore of that size and a constant backup, I'd expect a multi server installation in a datacenter.
