Default Keeping backups small

I am using Zimbra Open Source, and I am using a backup script which shuts zimbra down, and tars up the zimbra directory and stores off site.

I have noticed that it keeps increasing in size, and wonder what I can safely clean up:

1) folders in zmstat - looks like a 2.5M folder for every day; I assume I can just delete old ones here.
2) Multiple jdk directories - I assume I can delete all bu the latest one?
3) Multiple jetty directories - I assume I can delete all but latest one?
4) logger is huge. How do I manage that?

you can try removing the log files from the backups......
