Default Alternate POP/IMAP Ports

One of our employees was recently visiting another company who (for some unknown reason) had all normal incoming email ports blocked (including 110/143, etc) by their firewall. Obviously, he was unable to retrieve email he needed.

For this extremely rare occasion, would it be possible to have alternate pop/imap ports setup in Zimbra?

Yes, but then you'd have to change your client configs.

You may want to look at setting up a proxy for IMAP/POP instead so your users can connect to either port:
