You don't say which version of Zimbra is in use nor whether Outlook is connecting to the server via IMAP or the Zimbra Connector for Outlook. If it's IMAP or the ZCO then the simple answer would be to use POP3 which will delete the messages when downloaded. That isn't, however, a very good approach as there'll be a day when an important email has been removed from Outlook and won't be available on the server. The most appropriate solution would be to increase the Quota to something more realistic, HD space is inexpensive and should be used as the solution to this problem.
