Document conversion isn't available on the mac, since the thirdparty libraries arent' supported (currently, we're working on this).

You should:
zmprov mcv -zimbraComponentAvailable convertd

and restart your server, so this error doesn't recur.

I'm getting this error after a downgrade from the network edition - what is the current syntax of this command on 4.5.5?

Yeah, I also noticed that after downgrading from the NE trial all of the admin extensions are still installed (but not working) and the "Undeploy" button is greyed out. I was able to uninstall them using zmzimletctl (zmzimletctl undeploy com_zimbra_convertd). After clearing my browser cache the "view as html" link still appears, I'm thinking maybe I need to restart Zimbra (but that will have to wait until tonight, even a 30 second downtime and the boss seems to notice)

Snuck in a restart during lunch, no go. Even though the admin extensions page shows no extensions installed I still see "view as html" next to all of my attachments...
