I was just about to ask the same question. I'm halfway through a ~600 user migration from commercial sendmail to zimbra. I will eventually need to stop Zimbra from sending any mail to the old sendmail server. I'm also on OS 6.0.7 RHEL 5.5.

Default thinking.....

I will try to run the installer on the server in operation, to pass the stage and left the default settings, it may work, I hope that some moderator is a good idea to comment on whether or not

You don't need to reinstall zimbra just remove the options. Search the forums for one of the settings (such as 'zimbraMailCatchAllForwardingAddress') or go to the wiki and search there, there's plenty of information on how to remove domain forwarding.

these are the commands:
zmprov md domain.com zimbraMailCatchAllAddress ""
zmprov md domain.com zimbraMailCatchAllForwardingAddress ""
zmprov md domain.com zimbraMailTransport lmtprimary-zimbra-server-domain.tld:7025

zmprov mcf zimbraMtaRelayHost ""
