Please add back "canonical address" in the ZAC
This field in our configuration is used to determine which users can send relay to outside world

What it prevented you from? Why have you taken it away?

If you wish to restrict user from sending email out then you use Postfix restrictions: Restrict users to certain domain - Zimbra :: Wiki

Then you'll have to find some other method of achieving that goal, in the future this feature will be deprecated: Bug 33722 – deprecate canonical address

Hello,

where can I see/modify the values that I wrote in "canonical address" field with the previous version of Zimbra?

Two accounts (type first.last@domain.com) of our installation send mail as info@domain.com.

How can I manage/overwrite this value? Is it sufficient using personas?

Thanks in advance,
wo

I don't see why a Persona wouldn't do what you need. As I mentioned above the canonical address is being deprecated and you therefore can't rely on it to continue to work.

Thanks phoenix, ok to use Persona, my post was only for confirm

Actually these two accounts send mail as info@domain.com without any Persona configured so using this feature they will "manage/overwrite" the previous value of "canonical address".
