Default server crash...

My zimbra server just crashed last eve at around 2:00 am EST.
I have backups of the internal enterprise backup externally but they are 2 days old. I'm able to mount the raid drive in "recovery mode" and am copying the /opt/zimbra folder off to another drive. This will take some time to copy as I have around 200 -300 gb of data.
Here are the questions.
1. Can I just copy the /opt/zimbra folder to a new server, install the correct zimbra version and expect to see this thing come up?
2. Can I cross operating systems? I'm on centos and would rather get to a supported platform (ubuntu extended).

5.0.13 I think is there a log to tell under /opt/zimbra/backup ?
I don't want to search around too much until I get the backup folder off.

5.0.13 actually. I found the original install binary.

Centos 5.3
Running on HP DL380 G5 with raid array (was 5 will migrate to 10)
4 gb ram
