Congrats on your install of ZCS. Linux can be kind of daunting at first.
You would save yourself a lot of trouble if you replaced your "mail host server" with the Zimbra server.
Does someone else host your e-mail server for you?
If they do, do you have a static IP, and own your @domain.com address?
If so, then this shouldn't be that difficult.
If would be a lot more difficult to have zimbra fetch the mail from your other mail server for all of your users that use ZCS.
Am I right in these assumptions?
