Default Confirming Mail Delivery

Hello,

I am sure someone has experience a situation where users deny that some mail was not delivered especially if it gets them into trouble

Is there a way I can verify this from the logs?

All you can verify from the logs is the fact the mail was delivered to a particular mail server. You could upgrade to the current release and use the 'Read Receipt' feature, that isn't any definitive statement that the mail was actually read by a named recipient (I think they're actually a waste of time) and is about the closest you'll get to any form of confirmation.

Which log files should I look into? mail.info, messages or zimbra.log? Is it possible to set log rotation to a longer time frame?

Yes you can change the log rotation for the log files but it will get overwritten each time you upgrade Zimbra: Log Files - Zimbra :: Wiki
