Default Spam (UCE) Control: How do I bypass spam filtering for one user

I have a (cantankerous) user who wants spam to NOT go into his Junk folder.

He wants to process all mail manually from his inbox rather than from his Junk folder. Specifically the behavior is looking for is this which I had been able to do previously using a Courier IMAP/MailScanner system from which we migrated:
  • Spam email sent directly to user is not checked goes to inbox
  • Spam sent to alias/distribution list on which user is a member is tagged as spam and placed in Junk folder
  • Antivirus scan is run on all mail to user regardless of spam handling
