So in the case of Raid 0 + 1 you mean create Raid 0 LUN's and then make Pools of them ?

I would create raid1 pairs and join them together with raid0

raid10 are more fault-tolerant in a degraded raid set than raid0+1, however the latter raid offers slightly more performance in a degraded raid set. with that said, i use raid10 far more than raid0+1. however, the Xserve RAID Admin program created a raid0+1 volume which we ended up using as our "messages" store.
