Servers are designed to be run on single purpose machines. Encrypting the mail store would add overhead that most servers can't afford to dedicate to a task that is much better handled by implementing proper system security.

As far as I know it is impossible to encrypt the mail store in postfix (Which is what Zimbra uses to handle the mail messages).

What reason in particular are you wanting the mail store encrypted for anyway?
