Default Zimbra seems to hang

It seems like it is hanging up, what happens is I can login to the web admin console, then suddenly I can't.

And the only way I can get it back to restart the server, I can understand that every once in awhile, but like 2 or 3 times a day..

Is there a way I can restart zimbra without rebooting the whole box?

Yes, as the zimbra server, run:

Is there anything in /opt/zimbra/log/mailbox.log?

What kind of hardware specs are you running Zimbra on?

That will restart all services related to zimbra, but you should really look into solving the issue.
Does your system meet the requirements?
When zimbra "locks up" are there any errors in the logs (/opt/zimbra/log/mailbox.log or /var/log/zimbra.log)?
What is the file limit for your Zimbra user (ulimit -n)?
