Default Wildcards in aliases possible?

Hello!

Are (and if: how) are wildcards in email address aliases possible?
We are currently migrating to zimbra and got several wildcard aliases like
testing*@... which all map to the same account.

No, you can't have wildcard aliases. You have to create an "alias" domain. As far as I know you have to create it from the command line.

aliases are same as email id's so should follow RFC as normal email id's do. So whatever is allowed in emails should apply for alias id's as well
