Setup Zimbra as backup mail server

Hi guys,
I want to setup Zimbra as a backup mail server, so if our Exchange Server is down mail will be collected by Zimbra.

What Im looking for is some script or way to have the zimbra server send mail back over to the exchange server once it recognizes it back online. Can anyone steer me in the right direction?
