There are a LOT of different things being started up when Zimbra starts, involving a lot of CPU and disk activity. My server has a dual core Intel Xeon CPU 3040 @ 1.86GHz with 4GB of RAM:

My testing system takes ages too but I've never bothered to time it. Taking a cue from ArcaneMagus however, my results show:

Stopping the systems seems to take about the same time, but the restart shows a big difference.
The test system is a P4 at 2GHz with 1GB ram and single hard drive and production is a quad Xeon 2GHz with 6GB ram and a raid 5 array.

Yea with the large difference between sys and user time it looks like most of the work done is just plain CPU work.
