In terms of performance there's no difference between OS and network edition, other factors could be relevant though:

If you wish support or need hot-backups: use network standard edition
If you need Outlook support: use network professional edition

With a 1000 mails / minute I would worry about the internet connection before the hardware... what are you planning? A spam server

LOL...yup! sounds like a spam server...do you mind sharing the domain so I can ban you...? LOL...JK...

yea, I think your focus would be more on bandwidth and ISP policies...I doubt you can find an ISP that'll approve that...unless you colocate and purchase bandwidth yourself.

Good luck!
