That's a decision only you can make. Currently Zimbra 6 is beta software until the GA release, it may eat your data, your computer may blow up it may cause your hair to fall out but none of these will be the fault of Zimbra - it's your responsibility to make the decision about using it in production and if you lose anything it's not the fault of Zimbra (the product or the company).

There's an Import/Export feature in the Users Preferences but the Backup/Restore is an NE feature, product details and release dates are in the Product Portal.

Per user, hot, point in time backup/restore has been available since 3.0 as a network edition feature - including admin panel controls.

For the open source edition search the forums/wiki for solutions like those listed on Backup and Restore Articles - Zimbra :: Wiki

Other ideas regarding constantly dumping data somewhere.
Roll your own using the 5.0.10+ tar formatter (import/export) discussed here: ZCS-to-ZCS Migrations » Zimbra :: Blog or perhaps some ingenious use of the 5.0.16+ zmztozmig tool.
Or even make a brand new solution using redologs.
