Default System Restore

How long does it take for a full system offline restore? We had a server crash and we are rebuilding our Zimbra storage from the last full backup. It has been running for about 32 hours. We are tailing the log files so it's still restoring. However, our email and calendar systems are down as suggested during this process. Which leads to a few questions.

How long does a full system offline restore take? Measurements like 100gigs takes 40 hours.

Can we bring up our MTAs so that the can collect new mail?

If it will take 200 hours for the restore to complete can we build another new zimbra server and then sync our data when the restore is done? I know that I could use imapsync to sync email but what would I use to sync calendar data?
