Default Recover email logs

One of my email users had lost some emails because I have not configured his email aliases correctly.

The emails were bounced back (550: unkown user), unfortunately I cannot recover his emails but I want to check which email addresses mailed him.

The appropriate log file to view this is the /var/log/zimbra.log ?

Yes that is correct. If more than a day old they will also be in zimbra*.gz files aswell.

I have noticed that I have the followed files:

zimbra.log
zimbra.log.0
zimbra.log.1.gz
zimbra.log.2.gz
zimbra.log.4.gz
What happened with the zimbra.log.3 file?
How can I check the log files before zimbra.log.4 ?
How can I view/edit the log rotation period?
