We have users here with the same issue.
I've tried to find the old signature in the database and did not find it. Maybe it's stored in LDAP somewhere? Is Zimbra caching it on the server in Jetty?
One thing I noticed with one user when I ran this command...

zimbraPrefMailSignature: <FIRST LINE OF HIS OLD SIG IS HERE>
zimbraPrefMailSignatureHTML: <HIS NEW HTML SIGNATURE IS HERE>
Another user with the same problem does not have the
zimbraPrefMailSignature: entry. So removing that from the first user probably won't solve the issue, but I'm going to try it.
Has anyone else figured this out yet? It's like a bad zombie movie....old dead plaintext sigs rise up out of nowhere on a regular basis and we haven't figured out how to kill them off for good.
