Desabling 'Mailbox View' function from the administration conselo

Hi.

I am currently working on a Zimbra implementation on a small company where privacy seems to be a big issue, so they do not like the functionality that allows the administrator to see all mailboxes throught the admin console.

Is it any way of removing/disabling this function from the administration console?

No, there isn't. Domain Administration is a feature of Zimbra Network Edition.
