the shortest and most error free method will be appreciated. the wiki article on that is not clear and i want the least downtime before re-starting. 10x

The wiki article for ZmSetServerName - Zimbra :: Wiki is probably the easiest method, though you do need to ensure that your DNS has been properly configured. Like any significant change ensure you had adequate backups in place.
