out going mail backup

I have been ask if we can back up some so the user outgoing mail directly forward to a backup email box.
I have been search the wiki for catch all but just like to know will there be any better way just to have the individual user forward to his or her backup email then.

su - zimbra
zmcontrol -v

as dependant on whether you are running NE or FOSS we could advice on different solutions.
