Default Test environment - Catch all mails to any domain

We have been tasked to setup a mirror of our production web application environment (which sends thousands of emails to our customers). We have to make sure that this test environment never sends mail to our customers when we run our test batch jobs. Customer email addresses could be for any ISP or company. We need to actually send the mails so that our business analysts and developers can login to a webmail interface or use a mail client to download the emails and check that the email format (HTML, branding etc.) looks right and that the correct information is there.

Is there a way to have Zimbra accept incoming SMTP connections from our application server for any domain and dump it into a single mailbox?

Any help here would be greatly appreciated!
