Default Moving Backups Directory

We currently store backups in /opt/zimbra/backup but it's eating up more space than everything else combined. So I want to move the backup to a SAN volume.

Would it be as simple as copying everything from /opt/zimbra/backup to the new volume and then going into the Zimbra Admin console and changing the location?

Yup, move/copy/rsync keeping ownership and adjust the zimbraBackupTarget attribute - might run a test backup to make sure there's no permission errors.

Historical:
The old method (prior to 4.5.6 Bug 12442 - Backup/restore: add support for notification) included editing the crontab to adjust the path, then symlinking /opt/zimbra/backup to the new location so that you could find them from the admin console UI & to avoid Bug 21753 - ldap backup not kept with rest of backup.
