Contacts Display Prefs

This may be a FAQ, if so, point me please.

I have users whose contacts are displaying firstName,LastName, and would like to change that with one setting.
We can change each contact individually, but can you help us find a setting that will take care of that for all of his 780 contacts? All at once?
