I see that there is the possibility of logging into a yahoo account via ZimbraIM. Is it possible to use another other IM services such as jabber ?

If the other service uses XMPP then yes it is possible. You will require a SRV record for your domain eg.

_xmpp-server._tcp.yourdomain.name IN SRV 10 10 5269 fqdn.zcshost.name

Then just add a new buddy and enter their email address. With the SRV record in place the remote server will know how to find you XMPP server.
