zmprov gacf | grep zimbraMailPurgeSleepInterval
zmprov gs server.domain.com | grep zimbraMailPurgeSleepInterval

zmprov mcf zimbraMailPurgeSleepInterval 1m
zmprov ms server.domain.com zimbraMailPurgeSleepInterval 1m

(1m purges ~1440 accounts per day. Setting a server value overrides global.)

If the interval is set to 0, purging is turned off.
Code:
su - zimbra
zmprov mcf zimbraMailPurgeSleepInterval 0
