I do not know the password it sets after configuration. I have other database I will needed to setup on the server.

We don't recommend you add databases to Zimbra. It's not tuned for other data and may cause problems with upgrades. That said you can get the passwords from 'zmlocalconfig | grep password'.
yeah what kevin said, but since zimbra mysql runs on a non-standard port, you can still run the standard mysql. just make sure the machine can handle it.
p.s. if you really want the zimbra mysql passwords you'll need this -s:
zmlocalconfig -s | grep password
