Always bcc option?

I have not installed yet, but I was wondering if there was an always bcc option for incoming and outgoing mail... If not, can you manually setup postfix to do that?
I know that I can do it with postfix alone, but I wasn't sure if Zimbra would keep overwriting a manually edited postfix file

We don't have bcc for outgoing mail, but we do save a copy to the sent folder by default - this won't help if you want to copy an external address, though.

For incoming mail, if what you want is to forward a copy of the mail to another account, that's also possible - set the address up as a distribution list, forwarding to one zimbra account and one non-zimbra account.

Postfix config is modified by zimbra automatically, but it's not completely rewritten (speaking of main.cf, here - we don't really touch master.cf on the fly) - so, it's possible to make your changes stick, without much effort.

This is important for message retention requirements as many corporations are now required to do by government organizations such as the SEC. This is very common in the financial sector. Both incoming and outgoing messages must be able to be kept in a safe area not accessible to any users on the system.

It's possible to bcc an email that you send just click on the 'bcc' option when you're composing, if you mean is there an Admin UI option to do that then the answer is no. If you want to catch all outbound email then go to the wiki and search for 'legal intercept' or search the forums for BCC if you specifically want to do that.
