What your asking for is something we call cluster. This gives you fail over and the ability to have a live copy of the mail. This is available in the network edition.

Default Non migrated accounts are not scanned for virus and spam

I setup Zimbra as the primary and flow some of the email to the secondary box. However the anti-virus doesn't seem to scan the email that I flow to the secondary box. Is there a way to make sure that Zimbra will scan all emails before flowing it to the secondary box?

Where are you forwarding the mail? At the postfix layer? Can you post an example of such a message from the perspective of /var/log/zimbra.log

Default Perdition for retrieving email in a split domain

How can I configure Zimbra to use Perdition to retrieve email via imap in a split domain?

I'd like to do something like the zmprov ma user zimbraMailTransport smtp:mail2.example.com hack, but for users retrieving their mail.

This would allow us to do an incremental migration without requiring the users to change their imap settings in their individual clients.

Thanks

Rick
