You can make use of: CLI zmrestore Network Edition only - Zimbra :: Wiki
If you use -ca & -pre on the zmrestore command you can create a new account to hold the restore while not affecting the currently working account.
CLI zmrestore restoreToTime Network Edition only - Zimbra :: Wiki
zmrestore -s server.domain.com -a user@domain.com --restoreToTime 20080301164705 -lb full-2008xxxxxx -ca -pre restored_
Then connect to that account in an IMAP client (set password on the restored account as necessary) search for and copy the said mails, or open up the web interface/view mail on the account and fwd them to the main account.

Thanks, looks like I am a little screwed here as I have found another problem. Seems as our last backup was in the middle of last month. When I tried to fire it off manually I recieved the following error.
Message:Error! Cannot write to target path /opt/zimbra/mail0/BACKUP!
Error Code: CSFR_SVC_ERROR Method:
ZaBackupXWizard.prototype.createPath
I obviously need to get this fixed. Any ideas?
Permissions on that path? (mail0 & on BACKUP)
Are you mounting mail0 elsewhere? Does BACKUP exist? (createPath part of the message maybe?)
I'm thinking of: Bug 13198 - Proper error message should show when backup target directory does not have proper rights to take backup

Here is the permission to that directory and everything in it.

No, we do not have mail0 mounted anywhere else.
