retrive from file system email

Hi
i use and i am happy a full backup (i have foss edition)
i recently do a migration with success
i wan't start backup discussion i know there is Network edition and i hope to pass it as soon as possible
but

i wonder if it's possible and how to retrieve email from message store.

For example immagine that for same reason my backup is not good or is out date because i'm looking for email that has arrived in the middle time from my last backup and my ipotetic crash system (for example a physical damage to my server and so on)
what can i do if i am interested only in retrive these emails
Even if i have Network edition this situation can happen i think.
the point is how can retrive message from file system then i could decide to put them on a file server or resend after when i have a new server online

Messages are usually stored in /opt/zimbra/store/<hash>/<mbox-id>/msg/<hash>/
