Can we select as default that outgoing emails are written in HTML? I know that you can change each email into HTML when you are writing it, but can you set it so ALL emails are writen this way?

Yes, you can specify that mail is created in HTML as default. You'll need to check the Class of Service option in the Admin UI. Which version and release of Zimbra are you using?
