Default Zimbra 5 install on CentOS 5 / MX Record

To begin, I apologize if this answer is in another post. If it is, then I didn't find it.

I am working to install Zimbra 5.02 on a 64-bit CentOS 5 Linux server. The current email setup for this organization is a simple POP3 email service to its hosting service, so I can't afford to redirect the MX record in order to setup Zimbra. Here are my questions / issues:
  1. Can Zimbra be successfully installed and setup without resolving a MX record during setup?
  2. If so, will it be easy for Zimbra to pick up the email traffic once the MX record is redirected?
  3. Is anyone else having trouble with the SQL databases not populating during setup? Setup for Zimbra-store can not connect to the MySQL server via its socket.

I know that these are detailed questions, but any help would be greatly appreciated!
