Supported in the sense it's a rebuild of the RHEL version, yes. It's also, as I've said before, binary compatible with the equivalent RHEL version. There are a few minor differences but it's only a package installation difference, check the wiki and there's also a comprehensive 'how-to' on the forums about installing on CentOS5. I've been using CentOS4 (and now 5, soon to be 5.1) since Zimbra was first released over two years ago and I've never had a problem with it.
BTW, you should be seeing CentOS 5.1 by the weekend if you want to go with that.
