You could always use
CentOS5 for the new server (it's free and binary compatible with RHEL5), as a long term supported operating system it's far better than using a consumer grade o/s.
One idea would be to install your new o/s on the new server the install VMware Server (it's free) then install your FC4 as a VM. You could then install Zimbra on the host o/s, a bit long winded and I'd make sure you had plenty of RAM but it should be fairly easy.
