We don't support that as a hidden folder - but if you create
hidden_user@domain.com as a shadow account for
user@domain.com, and set a forward on the users account:
zmprov ma
user@domain.com zimbraMailForwardingAddress
hidden_user@domain.com
You'll end up with all the incoming email in another account, to which the user won't have access.
