Fedora core is more or less always in beta - but I think FC4 is stable (isn't FC5 in the release-candidate stage?)
As for zimbra upgrades - if you install M2, you'll have an upgrade path. The no-upgrade path was the 2nd worst decision we made, and we've learned our lesson. (For the worst decision, search for "iptables" in the forums
