You have a couple of options.

I prefer to use the admin auth, but you could reset the users password and make them reset it or have them type it in.

For the life of me, though, I can't remember if the admin auth is enabled by default or if you have to enable it. When it is enabled, in imapsync you would use --user2(correct user) --authuser2(adminuser) --password2(adminpassword)

You should be able to set the restored account password to whatever you want, since you'll be doing the maintenance with that one.
