The differences regarding Zimbra for the Red Hat linage are so small that I suggest to integrate them all in a single release. I have been using Zimbra NE for RHEL4 x64 on FC6 (see the wiki), and on CentOS, and Zimbra OS with FC5, RHEL4, FC6 and CentOS. In each case the changes are minor and can be automated in the RPMs and the installation script, plus a list of "pre-requisites" with the yum/up2date updates.
I didn't tested FC7 yet, that's for the future, but in any case, unifying FC5, RHEL4, FC6 and CentOS4 should simplify your release work.
