 Plesk the Pest
Okay, Thanks for all your help guys - We've found the problem.
I'm going to have to pay $25 for a OS-reinstall, but it will be less per month.
How difficult is it to v-host and have multiple domains with apache without using a control panel like Plesk? I don't think I need it as long as I understand how everything works, or at least eventually I'll won't need my "training-wheels."
Also, What is recommended - I have 3 options:
CentOS (Which I believe is easy to update with 'yum'... right?)
RHEL v4 (What I have, except I won't have them put Plesk on there.)
