IMHO, I wouldn't recommend running Zimbra on a server under the control of a Web Hosting Control Panel (like Plesk, which you state is on the server). It would be better served on a bare OS server (no Plesk, cPanel, Ensim, etc).
However, if you still desire to run Plesk, then as Phoenix stated, you'll need to stop & disable all email related stuff on the server (POP3, IMAP, SMTP, etc) as well as the web server under Plesk control.
It would be much cleaner to not have Plesk installed. I'd get ThePlanet to reimage the server using a base RHEL4 image.
