We do not change anything on your Exchange server, all the data remains there we only copy it to the Zimbra server.
You run the Wizard on the Exchange server and you don't need Outlook installed on the server (it's not recommended by Microsoft). I don't know if you've seen this but there's some documentation on the Migration Wizard
