Great! postqueue -p reveals the server is trying to send the messages to a server with a different IP than it's address.
It seems fiddling with the hosts file and the firewall dhcp naming it will eventually work (I went to dinner and it was all fixed when I came back :P)
Hope this helps someone else. The key to know is make sure Zimbra can resolve your ip accurately.
